More Lunch Box Left-Overs


Following on from the Mexican Breakfast, I now had about half of the refried beans left-over.

I mixed these with some cold cooked brown rice (always cool down immediately after cooking (rinse in plenty of cold water) as rice can be an excellent microbial breeding ground), and smeared with the remaining guacamole.

There was also the remains of a tub of hummus in fridge, and I made a ‘cucumber container’ for this, and included carrot sticks for dipping into it.

Add a line of small tomatoes and there you have a colourful midday meal!
